Chef Erik Carlson's Bio
Chef Erik Carlson’s culinary journey began at a young age, learning side-by-side with his grandmother—his first and most beloved mentor. From her, he discovered that food is not only special, but deeply personal, and that cooking for someone can be one of life’s most fulfilling and rewarding acts.
After a short stint in his first chef role on the Oregon coast, Chef Erik made the move to Seattle to deepen his culinary knowledge. He completed his formal training at South Seattle College, then spent the next 30 years working with a wide range of talented chefs and passionate food lovers, constantly expanding his skills and perspective.
Throughout his time cooking in the Pacific Northwest, he developed a love for simple, clean flavors—a philosophy that naturally evolved into a focus on healthful cooking. He’s known for creating dishes that are thoughtful, approachable, and leave guests feeling nourished and energized.
In his free time, Chef Erik dives into culinary traditions from around the world. He enjoys learning the roots of a dish, mastering its traditional preparation, and then experimenting with creative variations—unlocking a world of flavor possibilities.

Down to Earth Cuisine provides meals that are sustainably and responsibly sourced. We use GMO free products, organic when available, and wild caught seafood approved by the Monterey Bay Aquarium Guide to Sustainable Fishing.
Custom delivery uses only compostable containers to reduce plastic waste. We also work with One Tree Planted, a nonprofit that plants trees on our behalf to offset our carbon footprint.
