Veganuary

January and February, the months that veganism is promoted, known as Veganuary. Trying out new foods can be intimidating, but it can also be fun! Especially when it’s beneficial to the environment.

As a vegetarian, who also eats many vegan meals because they’re delicious, I used to be very intimidated. I didn’t really know how to be one outside of eating salads and frozen foods. That was until I found, How to Cook Everything Vegetarian, by Mark Bittman and Plant Based on a Budget, By Toni Okamoto. They taught me almost everything I know about substitutes and staples for my favorite meals.

I first learned that sweet potatoes, eggplant, and cauliflower are good substitutions for meals like enchiladas, chicken parmesan, and mac n’ cheese.

I then learned all about legumes. Chickpeas can be mashed and breaded just like chicken, lentils are a great substitution for ground beef, and pureed black beans make a mean soup, just to name a few.

What makes me so happy to have learned how to cook hearty plant based meals, is that you learn to eat the rainbow.

I’ve become very open minded to vegan meals in the last year and actually prefer them now. So I decided to start to cooking my favorite meals for my family and friends, some who are quite closed minded to the idea. But once they tasted the food they were pleasantly surprised at how appetizing these meals are.

So I’m challenging you to try and eat one vegan meal a week for the next month. Let me know what foods you try and how it turns out!

  • Sheet Pan Veggies (My favorites are sweet potatoes, cauliflower, asparagus, and carrots)
  • Eggplant Parmesan
  • Lentil Tacos
  • Cauliflower Enchiladas or Mac N’ Cheese
  • Loaded Sweet Potatoes
  • White Bean Cakes (Chickpeas, Cannellini, Great Northern)
  • 3 Bean Chili
  • Minestrone Soup
  • “Cheeseburger” Salad
