Add Another Fall Recipe to Your List

Warm your heart with this Salmon en Croute classic.
  • 1# Salmon
  • 3 Tbsp fresh dill
  • 1Tbsp Dijon
  • 1 9x9in sheet puff pastry
  • 1 egg
  • 1 tsp each salt and pepper

Roll out your favorite puff pastry, place salmon (dried with a paper towel) on the center of the puff pastry. Mix the dijon and dill and then spoon over the salmon. Season the fish and puff pastry. Brush the edges with the whipped egg to seal. Fold sides up to create a seal down the center of the fish )trim excess away. Fold up sides so you have 3 inches overlapping each end (trim away excess). Using a small paring knife make about 15 holes for steam to escape. Turn your package of love over so all the seams are on the underside of the fish and brush on the remaining egg. Bake in 375 degree oven for 22-26 minutes, checking at 18 minutes for color. It’s done when you have a golden brown color. Serve with roast carrots or your favorite fall veggies and a balsamic reduction.
