Originally from the Four Corners region of New Mexico, Chef Gabriel Candelaria’s culinary foundation is rooted in simplicity, authenticity, and a deep connection to the land. Raised on a cattle ranch with the San Juan River flowing through his backyard, he developed an early appreciation for fresh ingredients, hard work, and bold, honest flavors—values that continue to define his cooking today.
For the past 18 years, Chef Gabriel has called Las Vegas home, where he has built a diverse and accomplished career cooking up and down the Strip. His experience spans fine dining restaurants, high-end steakhouses, and wellness-focused spa kitchens, giving him a dynamic and well-rounded perspective on food and hospitality.
With over 15 years of professional experience, Chef Gabriel is known for blending refined technique with soulful, ingredient-driven cooking. His style is versatile, ranging from elevated comfort food to elegant multi-course tasting menus, each thoughtfully tailored to the client, setting, and occasion. Drawing from his background in nutritional cuisine, he creates menus that strike a balance between indulgence and wellness—delivering dishes that are both satisfying and nourishing.

Down to Earth Cuisine provides meals that are sustainably and responsibly sourced. We use GMO free products, organic when available, and wild caught seafood approved by the Monterey Bay Aquarium Guide to Sustainable Fishing.
Custom delivery uses only compostable containers to reduce plastic waste. We also work with One Tree Planted, a nonprofit that plants trees on our behalf to offset our carbon footprint.
